Grilled Flounder Recipe with Parmesan Cheese

When I was younger and my grandparents lived in the Florida Keys, Grandpa would go fishing every day or almost every day. We ate fish all the time and my grandmother would have to find more and more creative ways to prepare and serve it or else she would complain to me. This is one of the recipes that my grandmother cooked and that she really loved, so much that I had to get the recipe to be able to prepare it for myself and my family. This is one of the many recipes I received from Grandma, who was a great cook. If you love the taste of flounder and Parmesan cheese, you will definitely love this recipe. But you don’t have to use it as is, you can change some of the ratios to get the ideal flavor that’s right for you. Just like my grandmother, you can experiment in the kitchen to find recipes that you and your family will love and keep in the family for years to come. Now to the Flavorful flooder as I call it.

Ingredients

  • Half a cup of grated Parmesan cheese
  • Two pounds of sole fillets or you can have sole if you like
  • Quarter cup melted butter
  • Two tablespoons of lemon juice
  • Three tablespoons of chopped green onions
  • quarter teaspoon salt
  • three tablespoons of mayonnaise

Get a piece of heavy-duty aluminum foil about 14 x 14 inches and coat it with nonstick cooking spray. Place the fillets on the aluminum foil and brush them with the lemon juice on both sides. Fold the foil over to form some edges so the juices don’t seep out but do not cover all of the fish in the foil. Now place the aluminum foil over the rack, but make sure it is not sealed. Cover your grill or if you don’t have a lid use a large aluminum pan to cover the fish. Now grill it while covered over medium to hot heat for about 4 minutes. Add the Parmesan cheese, butter, onions, mayonnaise, and salt and brush the fillets. You will then need to grill it for about 3-4 minutes or until the fish flakes easily with a fork, this way you know your fish is cooked through. This should give you around 4-6 servings.
